I use the Quick Flags feature in Outlook a ton, and have a different purpose for all five colors. Only problem is that Outlook only knew them as Red Flag, Blue Flag, etc.
This Office Online document shows how you can sort of rename these flags to better suit your needs. It isn't quite what has been promised in Office 2007, but it will have to do for now.
